Everyone loves pancakes. How about to make your pancakes differently? These protein pancakes are healthy and fluffy with no flour or sugar. Above all, they are high in protein and they will give you energy for the whole morning. Protein pancakes are a perfect meal after you hit a gym in the morning.
Apart from that, they can be also a powerful breakfast before a long day.
Ingredients
- 1 cup of oats (plain)
- 1 scoop of vanilla protein powder (choose one of these)
- a bit of baking soda or baking powder
- 150ml of milk (can be also almond milk or other alternatives)
- vanilla essence
- 1 banana
- 2 eggs
- cinnamon
- macadamia oil (can be other alternatives – coconut oil or any other)
- strawberries, blueberries or raspberries for topping
Method
Firstly, put oats, vanilla protein powder, baking soda, cinnamon and vanilla essence in a bowl.
Secondly, add milk and eggs and then mix it together. After that, add banana and put the mix in a blender. That way you will create a thick liquid ready to cook. Once your mixture is ready, take a pan and pour a little bit of oil of your choice. I recommend macadamia or coconut oil.
Now you can pour the mixture on the pan. Wait for a few minutes and once it gets solid from one side, turn it and do the same from another side until it gets firm and golden.
The final step is to add some topping. I recommend strawberries and berries that go nicely with these pancakes. You can also add raspberries. To make your protein pancakes sweeter, you can add some honey or maple syrup as well.
If you need enough energy for a morning it can be a nice breakfast for two people.
This recipe will create around 8 medium protein pancakes.
